ChilliWorld Twice-Baked Potatoes

Fantastic on their own or as a side order. Our own wing sauce works perfectly in the dish but if you're looking for more heat sprinkly Dave's Spice over the finished product.

4 large Baking Potatoes 
8 tablespoons ChilliWorld Wing Sauce 
50 g. Butter 
125 g. Mature Cheese, grated 
4 Spring Onions, chopped 
Salt and Black Pepper, to taste 
 
King Edwards make the best baked potatoes, but any floury potato will do; the waxy variety don't work at all! Baked potatoes are best cooked in the oven although they may be microwaved and finished in the oven.
 
Bake the potatoes in the oven at 220 degrees C for 45-60 minutes until soft to the touch. Slice each potato in half lengthways and scoop out the insides leaving the skin intact. Mash the potato filling with the Chilliworld Wing Sauce, butter and salt and black pepper to taste. Return the filling to the empty potato skins. Garnish with the grated cheese and if desired chopped spring-onions and/or bacon bits. Place under the grill for 5 minutes until the cheese is melted.
